What makes it truly unique is its traditional iron griddle cooking technique, where the dosa is slow-cooked on a well-seasoned tawa using generous dollops of ghee—allowing the batter to ferment and caramelize naturally, creating its signature contrast of texture and taste. At Malgudi, it’s served the traditional way—with two house-made chutneys and poli inji, a tangy ginger-tamarind relish that perfectly complements every bite.
