Guided by a philosophy of authenticity and sophistication, the new menu presents a selection of dishes that balance heritage with contemporary technique. Among the highlights is the Beetroot with Pesto & Goat Cheese, oven-baked beetroot paired with creamy goat cheese, bright pesto, and red currant, a vibrant harmony of earthiness, sweetness, and freshness. The Indigirka, a refined take on a Siberian classic, features tender Muksun fish complemented by pickled onions and wild berries, offering an elegant balance of tradition and finesse.

Main courses include the Beef Cheeks, slow cooked to perfection and served with orzo and gremolata, delivering depth and richness in every bite, alongside the Chicken Thigh with Mushrooms, accompanied by velvety potato purée and earthy mushrooms, a composition of warmth and understated indulgence.
